Brasserie Bar Co, which owns both Brasserie Blanc and The White Brasserie Company, opened its fifth pub, The Sun Inn in Chobham, on Monday this week. The Sun Inn opened this week as part of The White Brasserie Company’s plan to roll out 20 pubs over the next three years.

Key features of the original 17th century building have been restored with a classic design. The 3,600 square foot space features original timber flooring, wood burning stoves and exposed oak beams alongside leather banquette seating and relaxed lighting to add comfort and warmth. The large, open bar area to the front of the pub seats 50, whilst a newly built extension to the rear houses the 96 cover brasserie, with a design that draws on the simple detailing of stable buildings found in the local area.  The brasserie and bar overlook a front garden with 34 covers, whilst a walled courtyard garden seats an additional 44.

The seasonally changing menu created by executive chef Clive Fretwell is a combination of traditional British pub food and French brasserie dishes, all made from scratch using quality ingredients. Starters include coastal cheddar cheese soufflé; Burgundian snails in garlic butter and home-smoked Shetland Isles salmon tartare. Mains feature the likes of slow-roasted pork belly with chateau potatoes and poached crab apples; six hour short-rib of beef with mousseline potatoes and braised carrots; and Scottish wild venison casserole with winter vegetables. Classic pub dishes such as pie of the week, an extensive range of steaks and Sunday roasts are also on the menu. For dessert expect dishes like pear and salted caramel butter anglaise or Normandy apple tart. Children are also catered for with a dedicated kids menu including a Henri Le Worm activity pack.

The extensive wine list features an array of quality French favourites and bespoke wines including their very own sparkling wine, Mousseux Premium Blanc de Blancs. Draught beers and bitters, a selection of premium cocktails and classic cocktails complete the list.
